This year, Alice a member of our youth forum, and Milana a Snow Camp apprentice, had the opportunity to join Fresh Tracks Chalet School, a life-changing experience that’s set them on exciting new paths. Let’s explore how Fresh Tracks supports Snow Camp and the impact of this partnership.
Fresh Tracks Chalet School, located in beautiful Cornwall, is a renowned residential cookery school specialising in preparing students for careers in chalets and the hospitality industry. With a curriculum designed for hands-on learning, they teach everything from meal preparation to customer service, ensuring their graduates are ready to excel in the demanding world of chalet hosting.

Fresh Tracks has been an invaluable partner to Snow Camp, offering fully funded places on their prestigious cookery courses to our apprentices. This winter, Alice and Milana were selected to attend, and their experience was nothing short of transformative.
This winter, Alice and Milana embraced the challenge of Fresh Tracks Chalet School, and their journeys highlight the programme’s profound impact.
“Fresh tracks was a great insight into chalet hosting as the days are structured the same. We got to practice so many chalet style meals and afternoon teas. Lesson time we were given amazing tips by the organisers and help in all areas of chalet hosting things you wouldn’t even think of. I left the course confident that I’d make a great chalet host ! And in our free time I got to try out surfing at the local beach it’s definitely not similar to snowboarding!”

“I’d love to share one of the best (and simplest) cake recipes I learned on the Fresh Tracks Course. This yogurt cake is light, moist, and incredibly easy to make, using just a handful of ingredients. Whether you’re an experienced baker or a beginner, this recipe is sure to impress and bring a taste of the mountains to your kitchen.”

Method:
1.) Preheat your oven to 180°C (350°F). Grease and line your cake tin to ensure an easy release once baked.
2.) In a large bowl, whisk together the eggs, sugar, and yoghurt until smooth and well combined. Add the sunflower oil and mix until the batter is glossy and evenly blended.
3.) Sift the flour and baking powder together, then gradually add them to the wet ingredients, stirring gently until everything is combined.
4.) Pour the batter into the prepared cake tin, spreading it evenly. Bake for 30-40 minutes, or until the cake is golden brown and a skewer inserted into the centre comes out clean.
5.) Let the cake cool in the tin for a few minutes. Then, carefully remove the cake from the tin and allow it to cool completely. Slice, serve, and enjoy!
This cake is perfect on its own, but you can easily add a dusting of icing sugar, a drizzle of chocolate, or some fresh berries to make it extra special.
